Mixed Beetroot

Supplied by Andy Pearman (Octobers box), who uses no-dig chemical free methods and waters his plants with an irrigation system fed directly from a natural spring. 

Suggested Uses:

Wash well before use. 

These have a beautiful interior, that begs to be appreciated, best to slice thinly and serve raw in a salad with a sprinkling of vinegar or herby olive oil. 

Half them and roast with some angelica seeds (included in your biome box), or you could use fennel or cumin seeds if that suits your tastes more.
