Cucumber

Cucumber

Supplied by Andy Pearman, who uses no-dig chemical free methods and waters his plants with an irrigation system fed directly from a natural spring.

Suggested use:

Spiralise into noodles, drizzle with a little soya sauce and toasted sesame oil AND sesame seeds and serve with fish, chicken, or tofu for a small but nutrient dense meal.

Make a mineral boosting smoothie, by blending with parsley, root veg and some dried seaweed.

Cut into thin slices with a vegetable peeler, drizzle with olive oil and lemon juice, sprinkle with sea salt and pepper and serve as a side dish.
